easy as, just get an allen key to fit, undo the clamp in the middle of the handlebars put drop bars on it and make sure you do it up TIGHT TIGHT TIGHT!!!!!
"Walkable" shoes are OK for walking a bit, but quite unconfortable if you walk more than, say 10 minutes, because they are really stiff. Stiff is good for pedalling, not so good for walking. As for the clip system, I really prefer CRANK Bros pedals over Shimano SPD ; it clips and unclips faster, much easier to "aim" your foot into the pedal.
Also even if the shoe, clip and pedal are completely full of mud and sand, Crank Bros will work, with SPD you’ll have to stop and clean them…
